Libby’s Pumpkin Roll

Libby's Pumpkin Roll


CAKE
1/4 cup powdered sugar (to sprinkle on towel)
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 large eggs
1 cup granulated sugar
2/3 cup Pure Pumpkin
1 cup walnuts chopped

Batter below:


FILLING
1 pkg. (8 oz.) cream cheese, softened
1 cup powdered sugar, sifted
6 tablespoons butter softened
1 teaspoon vanilla extract
1/4 cup powdered sugar
CAKE
PREHEAT oven to 375°F. Grease 15 x 10-inch jelly-roll pan, line with wax paper or parchment paper. Grease and flour paper. Sprinkle a clean dish towel with powdered sugar.

COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with nuts.


BAKE for 13 to 15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.


FILLING
BEAT cream cheese, powdered sugar, butter and vanilla extract in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving.

Check out Fall Foliage on the Highways and Byways in South Jersey

Beautiful fall leaves are at their peak in South Jersey, so it's a perfect time to head out and drive the Scenic Byways of the Pine Barrens. Get a good local map to map out your trip. We took the Southern Loop and the next day the Great Egg Harbor Loop. Our next trip will be the Mullica River Loop- Smithville-Port Republic-Sweetwater-Batsto-Green Creek- New Gretna in Atlantic and Ocean County.

Cape May/Cumberland County


The Southern Most Loop takes you up Rt. 50 in Seaville, (Dino's Diner, great food) to Rt. 49 in Tuckahoe. Make a left on Rt. 49, (you'll go over the new bridge). After DiLuzio's farm make a left on 548, then a left on 605. Then make a left on 550.  You are now in Belleplain. If you have extra time you may want to turn right (Down a bit)  into the Belleplain State Forest and see the lake. Or else stay on 550 into the town of Woodbine.  At the light in Woodbine 550 goes left and then turn right down Woodbine-Ocean View Rd(550).  Stay on 550 (You will pass the Woodbine State School and (further down on your right will be the Beef n Bear Tavern, a great place for some food. The Camppark next door is home to the $89 Million Lottery winner) then you will see Dennisville Rd. 610 at the light. Make a right on Dennisville Rd. Travel  along until you reach Dennisville enjoying the leaves along the way.



When you get into Dennisville, you will see many historical houses. (On Dec. 19 will be their Christmas Historical House tour, a lot of fun!) 610 intersects with Rt. 47 at the light. Make a right on Rt. 47. You will pass Dennisville Lake on your right.

If you have time take Rt. 47 north to Port Elizabeth. Don't go on Rt. 347, take the scenic Rt. 47. You are near East Point Light House, (not open) if you want to Google it) But on 47, you will pass Bayside Prison and when you get into Port Elizabeth check out the Maurice River Diner on the left. (After 347 reconnects. It was packed when we went past)

If you want to explore Millville stay on Rt. 47, or else turn onto Rt. 548 which will take you back to 49. I must say there was nothing on Rt. 548. Really the middle of nowhere! But it gets you back where you started. When you hit Rt. 49 turn right and it will take you to Rt. 50 turn right. (Over an hour ride)

Atlantic County

Another great loop is the Great Egg Harbor River Loop. Beautiful leaves as well!

Start at Rt. 9 & Mays Landing Rd. 559 in Somers Point. Go west on Mays Landing Rd. 559 all the way into May Landing. This is a nice road with beautiful leaves.  You will get some nice views of the water. (Before you get to Mays Landing you will see Sugar Hill Subs on the left, a great place to stop.) When you get into Mays Landing turn left at the light. You will pass The Sugar Hill Inn on the left, a dressy place, so I would make reservations if you stop here.  The next light turn left 559 the lake will be on your left. There is a parking lot on the left if you want to stop for pictures. 

If not proceed to Rt. 50/40 light and make a left. Past the McDonald's at the light is Rt. 50. Turn left and this will take you all the way to Rt. 9 in Seaville, about 20 min. ride. (On the left you will pass Atlantic County Park. In Corbin City on the right, you will pass The Buck Tavern and L's Restaurant . Both great restaurants.) Take Rt 50 (you will see more colorful leaves) to Rt. 9 North (left) will take you into Marmora. Make a right on Roosevelt Blvd and take the Parkway North back to Somers Point. (Over an hour ride)

That's Italian! New Mama Mia's Restaurant in EHT Superb -Fabulous - Delicious!

New on the restaurant scene at the Jersey Shore is Mama Mia's II in Egg Harbor Township. Owner Joe Massaglia's  Mama Mia's restaurant is open after a long wait. You'll find an intimate setting that will make you feel like you are in Italy. The staff is very attentive and helpful and the food is fabulous. It should be at the top of the list of next places to dine.

The décor is exquisite, warm, welcoming and Joe told me he is the decorator! Bravo! Check out the mural of Portofino Italy and the Mayor Sonny McCullough boat!

Make sure to get reservations 484-8877 and my advice-this is not the place for kids. They have a great take out, if you have kids, but make this a night for just you and your sweetie! Mainly because they don't have a kids menu and it is kinda pricey, but not over the top...and don't forget to dress up to make it an occasion.  With 8 tables you will feel like family.

Joe was born in Italy and believes in using the freshest ingredients and always delights with creative specials. Mama Mia's also offers catering and Joe gives a lot of time to charity work making the Restaurant Gala a huge success every year!

We were thrilled to enter the beautiful cozy restaurant and enjoyed with a great bottle of wine BYOB, and delicious homemade breads along with pizzas and a fresh bruschetta for each of us compliments of the chef. Next you are served a delicious salad with Caesar dressing and fresh parmesan cheese. You'll enjoy reading the menu while you enjoy the first courses.

We all devoured our meals. I enjoyed creamy risotto with prawns and scallops (below), my husband enjoyed the breaded veal chop (left) with garlic breading on a bed of lettuce and tomato. One of our friends raved over the Mediterranean Sea Bass, bronzini, on a bed of fingerling potatoes (bottom), local olives and string beans-that was filleted table side by the owner. They also serve the best homemade gnocchi with a sage cream sauce and I want to go back soon to enjoy.


 

For dessert we savored the freshest homemade cheese cake and heavenly tira mi su!
